2015 Rosé of Cabernet Sauvignon, Estate, 3-Pack
New Release! September 29, 2016
True to its bright pink and light nature, the wine bursts with summery fruits of strawberry, watermelon and even pear skin. On the palate juicy fruits and watermelon rind pair with bright acidity to give the wine vivacity. Best served well chilled.
The 2014 growing season was marked by the dry and warm winter with some late saving rains followed by an early bud-break and an eventual early harvest. Vigilant canopy and cluster managemen throughout the season and fuit thinning ensured that we were able to bring in healthy and tasty fruit.
The grapes for this wine were hand selected in the vineyard when they were harvested by the family and vineyard crew at optimum ripeness on October 14, and then hand sorted twice in the winery to make sure only the best reached the fermentation tank. Once in the tank, a portion of juice was drained, or bled, off--a term referred to as saignée in French. The juice went to a used barrel and fermented in barrel slowly over nearly two months before finishing primary fermentation. It did not undergo malolactic fermentation, helping preserve more of the natural acidity. It was aged in barrel another 2 months on its lees before bottling in July 2016.
